
Because of some health problems I’ve been going through the last couple of months I’ve had to stick to a very restrictive diet. Part of this is eating gluten free. I’m not coeliac, but through elimination it became obvious that it’s a problem food for me.
Because I tested negative for coeliac disease I may be able to eat it regularly again in the future, but for the moment I need to avoid it. I’m finding this tough, almost every meal I ate had some form of gluten in it. It’s overwhelming how many foods list it as an ingredient. Things you wouldn’t imagine have wheat products in them, like chocolate, baking powder and breakfast cereals!
So I haven’t been able to eat my beloved cupcakes for a few of months now, and my passion for baking dwindled. That is until I saw Nigella Lawson on TV, making the most delicious looking lemon polenta cake I’d ever seen! I went straight online and found the recipe, thankfully gluten free and easy to bake.
So today I spent a couple of hours in the kitchen, giving my first gluten free baking experiment a go. It takes me a long time to bake because I stop to take photos after almost every step; I’m sure most of you other bloggers are the same! The result was the lovely cake you see at the top of this post, It’s got an amazing lemon flavour and intense yellow colour when you cut into it.
Nigella’s recipe is here if you’d like to give it a try yourself. It’s easy to make, so suitable for all levels of baking and would make a perfect treat for afternoon tea with a friend. I’ll hopefully have more gluten free baking experiments to share in the future, but for now it’s back to enjoying a slice of this cake!

She’ll love this cake Natasha! It’s so hard to find satisfying gluten free cakes, and this one is really good!
The way my tum’s been acting up lately I think I’m having a problem with gluten or lactose! More women are complaining about digestive discomfort it seems – makes one wonder just what ARE they putting in our food these days!!! I do take a daily probiotic capsule, per my doctor’s advice, but even that hasn’t really helped.

Thanks Mary :) I’m a lot better these days, I can eat much more than I could even just a couple of weeks ago. It’s such a relief! It does seem like there are so many more digestive problems these days, I guess growing up on diets that involve a whole lot more unnatural things are taking their toll on our bodies.

I had no idea I could make a cake with polenta. Usually I have it with porcini mushrooms!
It makes a really good cake antonella, there’s such a lovely texture to the sponge. If you try it be sure to take photos :)
I’ve really meant to try some polenta cake (seems so very Italian). A lemon combo sounds perfect.
